Catch up post

Sorry all, I haven’t been up to much bentoing, and everything has taken a very hectic turn. But here, in very poor Instagram edited form, is everything I’ve been up to food wise. I’ve been trying to eat clean recently, and get back into the gym, and become fit and healthy once more. But this means, I haven’t really watched the presentation of my food.

I’ve been trying to get into the habit of meal preparation, when I have some free time, to make things easier for the coming week. This is a collage of a meal prep I did a week or so ago. I boiled baby corn, green beans and broccoli. Grilled two gammon steaks, boiled potatoes and brown rice. I also chopped up some honeydew melon.

I had some friends over, and I managed to serve up some delicious and healthy eats! I cooked Tilapia in lime juice and chili and served it on a bed of baby spinach and lettuce leaves. I also served wholewheat pasta with a fresh tomato and basil sauce, (simply amazing flavor!) a cucumber and corn salsa, pico de gallo, avocado, cilantro and homemade tortilla chips. A bit of a Mexican feel, and it was so filling.

This is a series of lunches/dinners I have had recently. All nourishing, all delicious and very importantly all filling. I don’t ever believe that eating healthily should leave you feeling hungry and deprived, if that’s the case, you’re probably taking the wrong approach. Starting top left and going clockwise, there is a chicken salad, with baby spinach and lettuce leaves, carrots, baby corn, pepper, tomatoes, spring onion, avocado and cucumber, topped with homemade tortilla chips and olive oil and black pepper dressing.
Then there is a chicken stir-fry, not my finest work…I’ve got some portions left in the freezer, it’s edible, but not overly enjoyable…just mediocre, however I don’t like wasting food, so it will get eaten eventually. Then the same chicken salad wrapped in a wholewheat tortilla and topped with Greek yogurt. Finally a simple omelet with avocado and tomatoes and two pieces of wholewheat toast.

A different shot of the dinner party, the leftover lunch bowl I made from it and the salad I ordered whilst eating out with a friend. Rich with flavor, but an absolutely huge portion, I only ate half. It was marinated feta, baby spinach leaves, avocado, broccoli, some kind of sprouts, and some other things that I can’t recall. It’s nice to be able to go out, but still feel good about your meal choice.

The ingredients that went into my chicken stir-fry, two smoothies for breakfast, a nice green and mango one, and a berry smoothie, and soup that I am now addicted to!

An utterly delicious salmon and Singapore noodle stir-fry, another berry smoothie and scrambled eggs and toast for brekkie!

Finally the only two bentos I have prepared during this time, plus another breakfast shot. The bento on the left is sesame ryvita, honeydew melon, strawberries, rice and gammon cubes with boiled veggies. The bento on the right is the same, minus the ryvita and strawberries.

Sorry for the hugely long post, but that is me officially caught up! Happy Easter everyone.

Egg “fried” rice bento

A quick and simple bento. Wholegrain rice mixed with scrambled eggs,  red onion, tomatoes and pepper.  Two cupcake cases with almonds and green grapes.

Egg and rice bento

My pitiful attempt at charaben. It’s just far too fiddly for me. I originally wanted to make my eggs into bumblebees, but they looked appalling, so I made them into eyes instead. Much easier, I did consider making a smiley face, but laziness stepped in. This bento contains wholegrain rice, with parsley grass and sweetcorn flowers, there’s also some more sweetcorn underneath the rice. One halved hard boiled egg, with nori on a bed of mixed salad leaves. In the silicone cup is peanut butter.  I took an apple to dip in the peanut butter.

Station Steakhouse

For a colleague’s leaving party, we went to a relatively new restaurant in town. I was majorly excited, as I knew of the restaurants sister eateries,  and had been wanting to try it ever since it opened. Alas a busy schedule kept me away, until now. The Station Steakhouse,  specialises in grilled meats,  particularly exotic food. Now I know everyone has a different view on what “exotic” is, but where I’m from this is pretty out there,  and I couldn’t wait to get stuck in.

This was my meal. A mixed grill board. It contained from front of the meat pile to the back; water buffalo, wild boar sausage, ostrich and mouflon. I loved everything except the mouflon. The wild boar came in at the top for me. Also on the menu was Kangaroo and crocodile. They sometimes have shark and reindeer, everything depends on the season. I would definitely go back, or should I say I will be going back. Great service, lovely atmosphere. Individual hand towels in the bathroom instead of paper ones or a dryer. My work has already booked the Christmas meal there.

Tuna steak salad bento

I grilled a tuna steak with salt and pepper and served it on a bed of mixed baby salad leaves and topped it with the last of the salsa I made for the Tilapia dish. A little silicone cup of Greek yogurt in the centre completes my bento. I also took some strawberries with me and carrots. I’ve said it before, and I’ll say it again, a side box would really come in handy.

Tilapia bento

Oh my, oh my was this a delicious bento.  I cannot wait to have this again. Using a recipe from Shape magazine as a guideline,  I sauteed Tilapia fillets in lime juice, chili and cumin,  then I topped it with a salsa made from corn, cucumber, onion, avocado and cilantro (coriander). The flavour was simply wonderful. I was a bit concerned about the juices leaking through to the rest of the food, so I made a little baran out of foil and also placed a carrot in there.  On the other side is a peeled satsuma and some strawberries. Our strawberry season hasn’t started yet,  but these were still very nice.

I also wanted to share with you, what has been the majority of my breakfasts the last couple of weeks. It’s absolutely delicious, healthy, but the best part about it, is that it tastes decadent, so I feel like I’m starting my day off with a treat,  and it means I don’t crave candy as much later on.

To make this smoothie, I’ve blended ice, Greek yogurt, oats, frozen mango and mixed berries and orange and lime juice. I tried putting milk in it one time instead of juice, but I wasn’t a fan of the flavour that produced.

What are you starting your day with?
Happy weekend everyone

Prawn salad bento

For this bento,  I simply sauteed some king prawns in tomatoes and onions with bay seasoning. I’ve added a side of a simple mixed leaf salad with red peppers,  and a cup of grapes.  I also think I took rice cakes , but they don’t fit in any bento box I own.
Here’s a little bit of a bento backlog. I decided not to give it, it’s own post because it’s nearly identical to one of my other bentos.

The same bulgar wheat salad,  with grapes and almonds. Absolutely loving being healthy right now. X
