Catch up post

Sorry all, I haven’t been up to much bentoing, and everything has taken a very hectic turn. But here, in very poor Instagram edited form, is everything I’ve been up to food wise. I’ve been trying to eat clean recently, and get back into the gym, and become fit and healthy once more. But this means, I haven’t really watched the presentation of my food.

I’ve been trying to get into the habit of meal preparation, when I have some free time, to make things easier for the coming week. This is a collage of a meal prep I did a week or so ago. I boiled baby corn, green beans and broccoli. Grilled two gammon steaks, boiled potatoes and brown rice. I also chopped up some honeydew melon.

I had some friends over, and I managed to serve up some delicious and healthy eats! I cooked Tilapia in lime juice and chili and served it on a bed of baby spinach and lettuce leaves. I also served wholewheat pasta with a fresh tomato and basil sauce, (simply amazing flavor!) a cucumber and corn salsa, pico de gallo, avocado, cilantro and homemade tortilla chips. A bit of a Mexican feel, and it was so filling.

This is a series of lunches/dinners I have had recently. All nourishing, all delicious and very importantly all filling. I don’t ever believe that eating healthily should leave you feeling hungry and deprived, if that’s the case, you’re probably taking the wrong approach. Starting top left and going clockwise, there is a chicken salad, with baby spinach and lettuce leaves, carrots, baby corn, pepper, tomatoes, spring onion, avocado and cucumber, topped with homemade tortilla chips and olive oil and black pepper dressing.
Then there is a chicken stir-fry, not my finest work…I’ve got some portions left in the freezer, it’s edible, but not overly enjoyable…just mediocre, however I don’t like wasting food, so it will get eaten eventually. Then the same chicken salad wrapped in a wholewheat tortilla and topped with Greek yogurt. Finally a simple omelet with avocado and tomatoes and two pieces of wholewheat toast.

A different shot of the dinner party, the leftover lunch bowl I made from it and the salad I ordered whilst eating out with a friend. Rich with flavor, but an absolutely huge portion, I only ate half. It was marinated feta, baby spinach leaves, avocado, broccoli, some kind of sprouts, and some other things that I can’t recall. It’s nice to be able to go out, but still feel good about your meal choice.

The ingredients that went into my chicken stir-fry, two smoothies for breakfast, a nice green and mango one, and a berry smoothie, and soup that I am now addicted to!

An utterly delicious salmon and Singapore noodle stir-fry, another berry smoothie and scrambled eggs and toast for brekkie!

Finally the only two bentos I have prepared during this time, plus another breakfast shot. The bento on the left is sesame ryvita, honeydew melon, strawberries, rice and gammon cubes with boiled veggies. The bento on the right is the same, minus the ryvita and strawberries.

Sorry for the hugely long post, but that is me officially caught up! Happy Easter everyone.

Mini meatballs bento

I spent a lot of time cooking bulk amounts of food yesterday,  so I have lots of stuff for bentos!! This was my lunch today.

From left to right we have; quinoa salad,  containing, broccoli, sweetcorn, pepper and tomatoes. Honey sweetened, roasted butternut squash and brussel sprouts, mini turkey meatballs,  and red and green grapes. It was very yummy,  but I feel like this bento box isn’t quite large enough for my appetite. 

Lazy bentos and Christmas cookies

Is it really a bento if all you’ve done is chucked leftovers or a salad in a box? Well as you’ve probably noticed, thats what the majority of my bentos have been recently.  So my bento resolution for the new year ( I know I’m rather early) shall be to make more creative bentos. But in the meantime here are some more lazy ones!

Last two aren’t bentos,  this is what I’ve had for breakfast a lot recently! Breakfast burritos,  don’t ask me how I rolled this one up, I can only put it down to a miracle! It has turkey bacon,  herby scrambled eggs, avocado and cheddar cheese on a white and wheat wrap. Absolutely delicious.  I was sad when I ran out of Turkey bacon and wraps. And finally,  my awful snapchat picture of toffee and pecan cookies I made as Christmas gifts.

Sweet Potato Salad Bento

I’ve been stuck in that rut of using the same bento box over and over again, recently. Relying on my trusty ol’ aladdin bento, just chuck it in and you’re good to go. But I felt it was time to dust off, some of my best loved (although least used) bento boxes, and give them a go in the spotlight again. This bento, is rather messy…and the first bento I’ve actually done in a while. It’s very simple, an undressed beetroot and leaf salad, roasted sweet potato wedges with red onion and chesnuts, and a satsuma…now I did rather naughtily accompany this lunch with three bags of candy..tut tut.
Have to say, at my new job, my lunches get much more notice, everyone ooh’s and ahh’s over my boxes and even my food (despite it’s blatant lack of prettiness or effort of late). Here’s to spreading the bento love!

Squished Bento!

This was yesterdays lunch for work. Left tier, which is incredibly squished.. I had less room than I thought. Two slices of Mediterranean style quiche, slices of corn on the cob and two little cheese sticks (actually becoming a little addicted to these!), right tier is bacon and chorizo salad. The salad is leftover from dinner, my friend cooked us all a lovely meal, Chinese chicken, the salad and mushroom chow mein, I wanted some of the noodles in my bento, but somebody beat me to the leftovers…it’s survival of the fittest out here! ha ha.

Very quick, thrown together bento of quinoa salad and roasted sweet and new potatoes. This time around the quinoa salad contains; sweetcorn, cucumber, red pepper, cherry tomatoes, mushrooms and onion. This salad, was much better than the last one I posted about… could have used a little more onion, and it’s a tad on the bland side, however I do prefer mine to be that way so I can make a dressing, but I didn’t pack one this time. I simply sliced new potatoes and a sweet potato and roasted them in olive oil. Tasty and filling.

Do you feel, that when you just chuck something like this in and go, that it doesn’t really count as a bento? I do, I don’t feel my “bento’s” really classify as bentos currently. Since staying with my friend ( I’ll be here for a couple more months) bentos have been far and few between, I’m tending just to eat oatmeal at work.

This was an incredibly quick, plain, jam packed salad, however the chicken was so well seasoned that it was incredibly flavourful. You can’t see all of the ingredients unfortunately, but it contained; Lettuce, Cucumber, Green pepper, Tomato and Roast Chicken. This little SpongeBob box has a slightly domed lid, so I could fit in more than I thought!

I promise, more regular, worthy bentos will return!
